Classic Apple Pie

The Story

A guest asked where to find “real American apple pie” in the city. I couldn’t send him anywhere that felt right. So I baked this and left it at the front desk with his name on it.

Ingredients

Crust

  • 2.5 cups flour
  • 1 cup cold butter, cubed
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • Ice water

Filling

  • 6 large apples, peeled and sliced
  • 3/4 cup sugar
  • 2 tablespoons flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Juice of half a lemon
  • 2 tablespoons butter

Instructions

  1. Make crust: Pulse flour, salt, and sugar. Add cold butter, pulse until pea-sized. Add ice water 1 tablespoon at a time until dough forms. Divide in half. Chill 1 hour.

  2. Prepare filling: Toss apples with sugar, flour, spices, and lemon juice.

  3. Assemble: Roll out one disc for bottom crust. Add filling. Dot with butter. Roll out top crust. Seal edges, cut vents.

  4. Bake: 375°F for 50-60 minutes until golden and bubbling.

  5. Cool: Let cool 2 hours before slicing.

Notes

The secret to flaky crust is keeping everything cold. Work quickly and chill the dough if it gets warm.
