Classic Apple Pie
The Story
A guest asked where to find “real American apple pie” in the city. I couldn’t send him anywhere that felt right. So I baked this and left it at the front desk with his name on it.
Ingredients
Crust
- 2.5 cups flour
- 1 cup cold butter, cubed
- 1 teaspoon salt
- 1 tablespoon sugar
- Ice water
Filling
- 6 large apples, peeled and sliced
- 3/4 cup sugar
- 2 tablespoons flour
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Juice of half a lemon
- 2 tablespoons butter

Make crust: Pulse flour, salt, and sugar. Add cold butter, pulse until pea-sized. Add ice water 1 tablespoon at a time until dough forms. Divide in half. Chill 1 hour.

Prepare filling: Toss apples with sugar, flour, spices, and lemon juice.

Assemble: Roll out one disc for bottom crust. Add filling. Dot with butter. Roll out top crust. Seal edges, cut vents.

Bake: 375°F for 50-60 minutes until golden and bubbling.

Cool: Let cool 2 hours before slicing.
Notes
The secret to flaky crust is keeping everything cold. Work quickly and chill the dough if it gets warm.
